Wed 1/31: Breakfast For Dinner

Hope you all are having a great week! We'll be meeting at our normal 6:30pm time this week.

Let's do breakfast for dinner this week. My plan is to make this Smoked Salmon Goat Cheese Quiche (not gluten free):

Feel free to bring anything you like. You can make it here (or get muffins, fruit, etc from the store) if you're running short on time, or you can throw stuff in a crockpot if you want to plan ahead. Just a couple ideas.

Wed 1/24: Mediterranean Salad Night

We're meeting with a friend before group, so we'll be starting at 7pm this week.

I've been wanting to make this Mediterranean salad, and I thought it could be perfect for group! Here's the link:

We'll serve the homemade dressing on the side (contains Parmesan), as well as Green Goddess dressing for a Dairy-Free option.

Ideas of things to bring for this week include:
  • Pita bread and hummus
  • Crusty bread with olive tapenade (or other mediterranean dip)
  • Protein for the Salad (like Chicken, Tofu, Steak, etc.) 
  • Additional salad toppings you think would be good (check the link to see what's already in it)
  • Fruit 
  • Veggies
  • Drinks
  • Dessert
  • Anything else

Wed 1/11: Build-Your Own Quesadillas (or Bowl)

Hey all!

We're going to do Build-Your-Own Quesadilla night this week!  Here's a list of things we need:

  • Tortillas (bring lots since each person will need two)
  • Bell peppers (either fresh or sautéed)
  • Onions (either fresh or sautéed)
  • Avocado
  • Cilantro
  • Black beans
  • Mexican, Pepper Jack or Monterey Jack cheese
  • Vegan cheese (if that's the way you roll)
  • Ground beef
  • Chicken
  • Jalapeños
  • Salsa
  • Guacamole
  • Sour cream (or Greek yogurt if you're feeling healthy - they taste almost identical)
  • Other delicious ideas
Once we're done building we can grill them :)

Keep in mind if you're Gluten-Free you can bring Quinoa or Rice and make a bowl out of it :)

Wed 1/7: Spicy Peanut Soup With Kale and Sweet Potato

Hey all,

Hope you guys had a great holiday!
I’m gonna try something new this week: Spicy Peanut Soup with Sweet Potato and Kale. I believe it’s both Gluten-Free and Dairy-Free.
Feel free to bring tofu to add, a side (like bread or salad), dessert, or drink to share.
The recipe also says this soup would go great over quinoa or brown rice. So if that floats your boat, go ahead and bring it.
There is also an option to bring nothing at all if you are running short on time :)
